The tomato is a fruit but it is usually cooked like a vegetable. Tomatoes contain lycopene, an antioxidant, in large quantities and this is associated with numerous health benefits. However, along with lycopene, tomatoes also contain several other plant compounds such as chlorogenic acid, narigenin and beta-carotene.
Tomatoes also contain various vitamins and minerals in abundant quantities and some of these are namely, Folate, Vitamin K1, Vitamin C and Potassium. Folate particularly helps in the functioning of cells and facilitates normal tissue growth. However, Vitamin K1 is essential for bone health and the clotting of blood. Vitamin C plays the role of a key antioxidant and nutrient and Potassium, being a vital mineral, helps in controlling blood pressure and preventing heart diseases.
